It’s frustrating when you’re desperately searching for something easy to cook for dinner , only to find that all the “easy” recipes you find are not easy at all. Not only that, but they require loads of fancy ingredients, herbs, spices and equipment that you simply don’t have .

I know that you’re not a chef , and you probably never want to be one. I am exactly the same We just want simple, tasty meals that can be cooked with minimal effort.

The problem is that every single cookbook and website out there is written by a famous gourmet chef with years of experience. Their definition of “easy” is a lot different to yours and mine.

Those celebrity chef cookbooks people like to give as gifts are chock full of gourmet restaurant quality recipes like Crème Brûlée.

Not long ago I was a typical college student. I’d just moved out of home and into a share house where I could finally be independent.

Life was good with the exception of one thing I had to cook.

I myself have fallen into the fast food trap with my parents. When my parents first moved to Texas I decided that frozen food was the way to go. I would look at all the frozen dinners and look at the sodium content and decide what items they could eat. I picked out the dinners by the amount of sodium per serving and see what was appropriate for them to have on a daily basis. The ladies taking care of my parents could easily heat up the frozen dinners for lunch and dinner without too many issues. Breakfast was ok for them using egg substitutes and making cereal/toast etc. One day I happened to look at the sodium content in the cereal, pancakes, waffles, biscuits, and flavored oatmeal, I was shocked and appalled at the sodium content. I never thought about sodium in frozen waffles and pancakes. One serving of those frozen waffles the sodium content is 440mg

Finally the day has come for the first Cookbook dedicated to people with sarcoidosis to be published. After writing the Sarcoidosis Remission & Aden Protocol and during the counseling with the people on the program, I kept hearing things like:

- " it's to hard to organize my meals, it became a full time job following the diet "
